I cast...That's almost exactly how I knit socks. I cast on the toe of one sock, then the other. Work a few inches or pattern repeats of one, then the other. Usually one of them grows a little faster then the other (socks are my usual knit on work breaks/waiting in line/in the car project) so then I just swap them out.
